Betty’s mushroom barley soup

Our friends’ moms all pretty much know how to cook, so I delight in getting some of their recipes. This soup is one of those hearty, homey soups that is perfect for dreary and dark winter days.  Chris decided to bake some bread over the weekend, and it was the perfect compliment.


We found it…in our recipe box.
We made it…just as Betty wrote.
We ate it…3 times/6 servings.
We thought…The sage flavor was great.  Don’t go overboard on the barley or else it will swell and you’ll have stew like mush instead of soup for the leftovers.  It would also be good with some carrots and/or celery, but why mess with something so delicious?
