We’ve made this soup before, but it always seemed heavy and way too spicy. We made a few modifications this time and I think it’s a keeper.

Notes: We halved the recipe and cut back on the red pepper. For liquids we used 3 cups broth and 1 cup of milk. I like the potatoes sliced. Our kale bunch was huge so we only used half. Made 4 servings for us.
