I know, I know. I skipped a week! But let me just direct you to a tasty stuffed cabbage recipe we enjoyed from Smitten Kitchen to make up for it. We used a green cabbage and halved it since it was a small head. And subbed out the ground beef and used sausage instead. It was delish. I was afraid it might be too heavy for summer, but I was wrong.
Our CSA has brought us lots of basil, some cucumbers, zucchini, potatoes and garlic. That pretty much mimics what is available elsewhere at the farmer’s market with the addition of some green beans and tomatoes. And the corn is just starting to come in. Don’t worry, we helped ourselves to all of them this week…
Also, pickles are sitting on the counter cooling now. I have 7 pints, plus one in the fridge so I do hope they turned out well! Seeing as how Chris won’t eat them, it’s a lot of pickles for me to go through on my own.
- Pizza, salad and chocolate chip cookies – we’re having a friend over to enjoy tasty pizza and summer’s bounty. The cookies help, too. We’ll make a margherita and a regular one. Mmmm.
- Tabbouleh, hummus and fresh pitas – we’re using the Artisan Bread in 5 Minutes a Day method so we can have the pitas fresh.
- Zucchini lasagna and sweet corn – We’re tweaking this recipe a bit to include some white sauce along with the tomato sauce. We’ll see how it turns out!
- Bacon, potato and cheese frittata – Yum.
