What’s for dinner at the White house? (Week of May 15)

There was not much cooking going on this week in the White house!  Well, not much cooking for us anyway.  We had a FANTASTIC weekend visiting my alma mater, but most importantly spending time with some of my favorite people in the world.  We laughed until we cried, hugged a lot, and visited a museum and got in touch with our artistic selves.  But mostly we just got to be us in a place that’s familiar.  It was amazing.

It also helped that we ate Herrell’s ice cream 3 times (hey 3 out of 4 days we were there isn’t bad!).

The Chinese/Japanese food didn’t hurt much either.

Needless to say, our week has been short and we’ve gone with simple.  On top of that, we put together the dinner for the group we volunteer for.  Next week should be closer to normal than we’ve been in a while!

  • Huevos rancheros – We generally just improvise this each time we make it, so it’s never the same.  This week we used canned tomatoes, black beans, onion, garlic and jalapeno on a flour tortilla.  Top that with an egg and cheese and it’s an easy and filling meal to come home to.
  • BFF soup – This is the soup we adapted into honeymoon soup, and since my BFF gave us the recipe we’ve decided to name it after her.  Sure sounds better than ‘Tomato, spinach and tortellini soup’.  It’s a lot like this recipe.
  • Sloppy joes, etc – We made 3 lbs. sloppy joes, two Texas sheet cakes, some vegetarian sloppy joes and chopped a whole lot of salad veggies for the dinner.  We gave our kitchen (and ourselves) quite the workout!
  • Kale pesto pasta – We have some kale pesto in the freezer, so we’ll use that up for an easy recuperating date night.
