We’ve got quite an eclectic menu this week, but I think it’ll be tasty! I’m also trying my hand at a minified version of Olive Garden’s chocolate lasagna. We’ll see how it turns out!
- meatloaf with roasted cauliflower – it seemed strange to serve meatloaf without some sort of potato, but it was delicious all the same.
- Miso soup with soba noodles
- Spaghetti with chickpeas
- pesto quesadillas with red pepper, red onion, mushroom and zuchinni and a side of corn
- Saturday is our Thanksgiving dinner including turkey, gravy, stuffing, mashed potatoes, rolls, green bean casserole and pecan pie. We’ve got a lot of prep to do for it throughout the week!
